350 From the Cauldron…”Automatos Magikos!”. Flora’s Sweetness in Man’s Sourcery

Alchemy’s pure deliciousness.

Uncertainty and the thrill of adventure,   a taste for the curious, possible reward and innocent fun – all essential invisible ingredients for a little culinary magic to transform Flora’s beauties and beasts into new flavours and fortunes.

                                                                                                   

 

Since Man’s Time began,  Nature’s botany has been worked  and reworked into limitless magical transformation.  Flora to food, is the chemistry where Nature meets Man’s incredible imagination with inventiveness, determination and discovery. Flavoursome spells from tradition to modernity,  contain  bewitching compounds and crafted partnerings between the super and natural to create the supernatural.

For most of us, in our daily sustenanc the taste of success requires simple and everyday trickery – easy, fast equations for practicality over spell-binding complexity. Yet the magic of perfecting true simplicity always does seem to be the hardest to master well. However with patience, achieving excellence is always possible, and real achievement should always to be marvelled.

Take the evolution of our food, the array of choice and concoction has taken eons. And when Flora and Man do finally suitably combine to produce something to satisfy our insatiable appetites, there are likely to be many journeys to make, difficult obstacles to overcome.  Before reaching our desiring palates, this means going beyond the challenge of shopping trips to the supermarket and family fusspots…

And so, screen-shot-2016-10-31-at-11-12-54 to capture global history and tradition in a bite of Autumn, a recipe attempts to cast the wonders of alchemic deliciousness for the modern magic of the Season – “out with the old and in with the new”:

1. Take a generous  handful of sun-burnished sweet untitled-copy ripened in Mediterranean climes.  Lightly braise/roast with about 10 leaves of screen-shot-2016-10-31-at-11-16-07-copy-4at 140c on fan.

They will transform into sumptuous (excuse pun)  “raisins d’etre”. Their wonderful rosy wine juices feature in the mixing cauldron above.

Slice 1.5mm across into whole slices, of around 1mm thick if possible.

Chop the other 1.5 into another into 1cm cubes maximum.

Their sharp character is reduced completely in an oven induced coma at 160c fan. Bake dry and check till wrinkly. They will rewake aged, but as sweetened 3 appley-dappley Graces.   Just a tad different to Botticelli’s original rounded beauties, these triplets will flirt for attention as Baked Soft Sweetness, Caramelised Chewiness and Jaunty Honey Crunch. The Arts of the Tempting Tarts, so to speak. But the magic has only just begun.

From the Occident, rice transforms its petrified maggot-like grains to the finest silky screen-shot-2016-10-31-at-11-16-00 Sift 200g with 1 tsp of baking powder and place to the side.

When plant canes from  the Caribbean transformed into bags of glistening light brown caster screen-shot-2016-10-31-at-11-16-00-copycrystals over 300 years ago,  the mystique of the future of food beckoned and there was no return.

smooth.

4. Now gently stir in the rosemary and juices from the raisins.

Add the chopped apple and divide into about 20 equal portions of large cup cake cases.  The mixture is quite chunky and the cases,  about a 1/3rd full. Bake until done. Rice flour bakes pale, so just test with a knife after 10-15 mins. Allow to cool.

Sugar Crystals has had many destinies and now it must be ready to dissolve completely for even more delight.,,,,

5.  50 g (a few dessert spoons)  screen-shot-2016-10-31-at-11-16-00-copy-2 must further liquefy with softened screen-shot-2016-10-31-at-11-16-07-copy-7butter, plus a few dessert spoons of thick single cream. Now await for hubble-bubble on a very low heat. Stir to mix and then cool. The condensed compound  is the most tantalising – Toffee Saucery.

6. Wand this wonder with the back of teaspoon to drizzle over each cooled cake  Add a thin baked apple slice on top of each, and wave the Toffee Saucery again on top of each slice.

7. The next touch will be the addition of two halved screen-shot-2016-10-31-at-11-16-07-copy-5for two very green eyes. A tiny, tiny touch of salt, helps provide  “salted caramel nut”, flavour once on top of the toffee sauce apple slices.  Then sprinkle the final magic sparkle – “bronze crunch” for glittering wonder-warts and rapturous rotting smiles.
